RECIPE: The BEST Soft & Chewy Chocolate Chip Cookie You’ll EVER Make – Pinky Swear!
I’ve been on a mission to find THE Softest and Chewiest Chocolate Chip Cookie Recipe for a long time now. I’m talking an uber soft, thick and chewy chocolate chip cookie, like Chips Ahoy makes or even like the ones Costco sells in their bakery. LOVE Costco’s bakery, by the way!
Well, I’ve finally found the recipe! I actually stumbled upon it by accident. My husband was a Costco a couple weeks ago and called to ask if it was OK to get the Kirkland brand of chocolate chips since they were $2 cheaper than Nestle. I said sure, I’ll give them a try!
It wasn’t until a week later when I opened the bag to make some cookies that I noticed a chocolate chip recipe on the back of the bag. I guess that makes sense now that I think about it. Most packaged food items have recipes on the back or sides of the box or bag they’re in. I swear I have such blinders on most of the time, so I know I miss a lot of neat things. I guess this time was different because I was curious about the Kirkland brand of chocolate chips, so actually took the time to check out the packaging. What a novel concept! HA! I’m so glad I did!
In all my years of making chocolate chip cookies, they’ve always been too greasy or too flat or too crunchy (ick – that’s what gingersnaps are for in my opinion!) or… or… just not soft, thick and chewy.
As you can see, this chocolate chip cookie recipe bakes very well. The edges are brown, but not thin and crispy because there’s too butter. The cookie bakes tall and stays that way even after cooking. Such a rare thing with other recipes, even Nestle Original Toll House. Those never backed like I thought they should, which is like the photos above. The center of this cookie is also very soft, chewy and cake/cookie dough-like texture. It’s not doughy, but on the verge. So soft. Like cookie clouds.
These chocolate chip cookies literally melt in your mouth.
I can only imagine what they’d taste like a la mode! Talk about the ultimate cookie treat!

RECIPE: The BEST Soft & Chewy Chocolate Chip Cookie You'll EVER Make – Pinky Swear!
Yield: 2 dozen cookies
Prep Time: 10 minutes
Cook Time: 40 minutes
Total Time: 50 minutes
1/2 cup (1 stick) butter, softened
2 tbsp. shortening
1/2 cup granulated sugar
1/2 cup packed brown sugar
1 large egg
1-1/4 tsp. vanilla
1/2 tsp. baking soda
1/2 tsp. salt
1-2/3 cup all-purpose flour
1 cup chocolate chips (3/4 cup for the mix and 1/4 cup to put on top of each dough ball)
1/2 cup chopped nuts (optional)
Combine shortening, butter, sugars, egg and vanilla in a medium-sized bowl. Mix thoroughly with an electric mixer on medium speed.
Add baking soda and salt. Mix.
Slowly add flour until thoroughly blended.
Add 3/4 cup chocolate chips and mix with a wooden spoon or spatula. Reserve the remaining 1/4 cup chocolate chips for the top of each cookie dough ball.
Add nuts, if desired.
Roll dough into 1" or 2" balls. I used an ice cream scoop for mine - slightly rounded. Place on a cookie sheet lined with a Silpat mat or parchment paper. With remaining chocolate chips, press chocolate chips halfway into each dough ball. I happened to use 5 chocolate chips per dough ball. If you have extra chocolate chips afterwards, you know what to do - EAT THEM!!!
Bake at 350* for 8 to 10 minutes. For a softer cookie, chewier cookie, bake until the edges and peaks are slightly golden brown.
