RECIPE:  Pineapple Chocolate Chip Popsicles

I don’t usually have leftovers when I’m making my chocolate creations, but when I made these Dark Chocolate Pineapple Popsicles last week I had some extra pineapple chunks that needed to be used before it went bad.

With the recent hot 80*+ weather here – HEY, it’s Washington State, so anything over 75*, it’s officially HOT – I quickly decided a frozen treat was my best option.

Having made these Invisible Cookie Dough Ice Pops developed by Lindsay Landis of Love and Olive Oil, I was inspired to try my hand at my own version by making these Pineapple Chocolate Chip Popsicles.

So here we go with yet another quick, easy and healthy recipe! :)

RECIPE:  Pineapple Chocolate Chip Popsicles

In a blender, or food processor if you have one, blend pineapple chunks until they’re pureed.  Or, you can just use pineapple juice and skip the blender!

Next, drop a small amount of chocolate chips into each popsicle mold.  Fill with pineapple juice.  I have to add here that pouring the pineapple first, then dropping in the chocolate chips is probably better.  Dropping the chocolate chips on the bottom first actually caused air bubbles in between the chips when I poured the pineapple juice over them.  You can see small air bubbles in the bottom of the mold on the right.  I managed to get most of the air bubbles out by poking the juice and chocolate chips around with the end of a utensil.  Even then, after they set up in the freezer, some of the chocolate chips stuck to the mold when I tried pulling them from the mold.

If anybody tries the pineapple juice, then chocolate chips method, let me know how it turns out.  I plan on trying this next time, but between work and the lack of more pineapples, I haven’t gotten around to it.

Despite the chocolate chips issue, these Pineapple Chocolate Chips Popsicles are actually very good.  Naturally sweet pineapple and the chocolate chips compliment each other well.  Very tasty and refreshing for sure!

RECIPE: Pineapple Chocolate Chip Popsicles

Prep Time: 5 minutes

Cook Time: 3 hours

Total Time: 3 hours, 5 minutes

Ingredients:

1/2 cup chocolate chips
1 cup of crushed pineapple chunks or juice

Directions:

Crush pineapple chunks or prepare pineapple juice.

Place a small amount of chocolate chips in the bottom of each popsicle mold.

Pour pineapple juice into the molds.

Chill for 3 hours, or until set.

Enjoy! :)

    Pineapple and chocolate is a new ingredient combo for me, Laura! I tried it for the first time earlier this year – I had chocolate covered pineapple slices. The combination is to-die-for. And putting those perfect flavors into a popsicle is madness/genius. You are the chocolate queen. AND the no-bake queen. LOVE IT!

    I have been making a lot of popsicle recipes this summer and sadly most of them have been duds–I don’t know what’s up with that! Maybe I’ll try these next time. I already have the chocolate chips! :)

      Yup, the can be tricky to make when you start throwing other things into them. I read in a cookbook you can brush honey on items (banana slices, etc.) you want to stick to the outside of the mold so they don’t sink into the popsicle. I need to try that to see if it works!

    Um, I officially love this blog. First off, I love popsicles, they make me feel like I’m a kid again and you combined my two favorite things: pineapple and chocolate. I can’t wait to make these with my kiddos! GREAT GREAT GREAT post!!! Love it!
