RECIPE:  No-Bake Chocolate Squares

Quick, easy and tasty.  Those are the three things I look for when I’m craving something sweet. No-Bake Chocolate Squares are just that treat today.

With summer here (not in Seattle… sigh), I wanted to try a chocolaty treat that wouldn’t heat up the kitchen.  Even though summer hasn’t arrived here, our house does heat up rather quickly.  Gotta love a house with lots of windows and a western exposure.  Even on a mild day it heats up.  Shoot, I heat up at the drop of a hat in my middle-aged years!

RECIPE:  No-Bake Chocolate Squares

So when I came across a quick and easy recipe for No-Bake Chocolate Squares in my lovely copy of ‘The Golden Book of Chocolate‘, I had to try them.  This cookbook is awesome, by the way.  It has pictures for every ooey, gooey chocolate recipe!  :)

RECIPE:  No-Bake Chocolate Squares

To say that this recipe is easy is an understatement.  I don’t even think it took me 15 minutes to make.  I also love that the list of ingredients are easy to find.  Super important in my days when 24 hours seems more like 12!  Not to say I won’t ever experiment with specialty ingredients.  Sounds like fun!  But today, we’re keeping it simple.

While these are good, I found them to be quite buttery.  No surprise there, actually, given the ratio of butter to the rest of the ingredients.  If I make these again, I’m going to experiment with cutting the butter by one-third and see how the consistency and taste turns out.  All-in-all, these are pretty tasty.  Especially the chocolate topping.  :)   My husband thought they were OK, but my 12-year-old daughter loved them.

RECIPE: No-Bake Chocolate Squares

Yield: approx. 20 squares

Prep Time: 15 minutes

Cook Time: 2 hours

Total Time: 2 hours, 15 minutes

Ingredients:

1 Cup butter
4 Tablespoons unsweetened cocoa powder
1 Tablespoon firmly packed brown sugar
2 Tablespoons light corn syrup
2 Cups finely-crushed graham crackers
4 oz. semisweet dark chocolate chips or chocolate bar

Directions:

Coat an 8" square baking dish with cooking spray or butter.

In a small saucepan, melt butter over low heat. Add cocoa, brown sugar and corn syrup and stir. Bring to a boil, allowing it to boil for 1 minute.

Remove from heat and mix in the finely-crushed graham crackers.

Line prepared baking dish with the mixture, pressing down firmly.

For the chocolate topping, melt chocolate in a double boiler or microwave in 30-second increments, being careful to not overheat. Pour melted chocolate over the cookie base.

Place in refrigerator to set, approx. 2 hours.

Cut into squares.

TIP: For easier cutting, bring to room temperature.

    Am I missing something? Where does the cocoa powder and brown sugar come into the recipe directions?

    I’m actually beginning to think about changing my blog name to sally’s NO-BAKING addiction because of my latest need to NOT bake my desserts. It’s been over 100+ degrees the past week in Baltimore!

    I also favor quick and easy recipes. I love these bars! They remind me of the no bake peanut butter chocolate fudge bars my mom made for me when I was little!

      HA! I’m here in Seattle and we’ve only hit 80* MAYBE twice! Usually summer hits on July 5th, and I’m not kidding. Sad. I’m sorry you’re burnin’ up already. :(

      Funny you mention the no-baking, I’m going to focus on very little baking this summer, even if we never get a real summer here. Like you said, who wants to fire up the oven when it’s already an inferno in the house?!?

    Ooh, that chocolate on the top looks so rich and fudgy! Our kitchen doesn’t heat up when we use the oven (it’s very open!), so I always forget about that when I’m writing recipes for the summer. I’ve had a few people chew me out about that–ha!

      Yeah, I’m refraining from posting recipes that require the oven (for the most part) given the fact that most people are having actual heat, unlike us. :P

      That’s funny (?) that people are chewing you out for it. HAHAHAHAHA! OK, NOT!

    These look great! I collect recipes JUST for the hot weather of summer. Has anyone tried cutting back the butter? I’m not afraid of butter or fat, but I don’t want greasy.
