Chocolate Chip Streusel-Filled Coffee Cake

Mmmm, doesn’t this Chocolate Chip Streusel-Filled Coffee Cake look absolutely yummy?

Believe me, it is!

I absolutely LOVE this coffee cake recipe, so much so that this is the only one I ever use.  It’s never occurred to me to look for a better recipe since this one absolutely rocks.  Besides, my grandma got this recipe many years ago from a magazine and it’s been in our family ever since. So why improve on something that’s, to me, already perfect and everyone loves, right?

Well, except this time I decided to add Chocolate Chips to it!  Duh!  I had to.  Otherwise it wouldn’t have qualified for inclusion on this blog.

That’s my story and I’m stickin’ to it.

OK, here we go, off to make a Chocolate Chip Streusel-Filled Coffee Cake.

the ingredients

The ingredients.

flour

In a large bowl, add flour.

baking powder

Baking powder.

salt

Salt.

granulated sugar

Sugar.

stir

Stir until mixed well.

oil

In a small bowl, add oil.

eggs

Eggs.

milk

Milk.

vanilla

Vanilla.

mix

Mix together.

add to flour mixture

Pour the egg mixture into the dry ingredients.

Mix well.

mix

Like this.

butter

Melt butter.

Like this.

pour

Pour butter into a separate bowl.

brown sugar

Add brown sugar.

Flour.

cinnamon

Cinnamon.

Mix well and divide in half.

Pour half the batter into a greased baking dish.

Spread batter to the edges with a spatula or by gently moving the dish side by side for even coverage.

Spread half the topping onto the batter.

Add half of the Chocolate Chips.

Add the remainder of the batter by evenly pouring over the topping mix, not in the middle like I did here. Do as I say, not as I do.  HA!

Spread the batter with a spatula.

Place in the oven. No, I still haven’t cleaned my oven.  I will when I smell something burning, like rhubarb pie juice that’s spilled over.  Phft!

Voila!  It’s done!  Mmmm!  It smells SO good!

Chocolate Chip Streusel-Filled Coffee Cake

It is delicious.  Chocolaty delicious!  The Chocolate and brown sugar topping blend perfectly.  Not surprising since it’s all the same ingredients that Chocolate Chip Cookies has, except the cinnamon.  I took this to work and my co-workers thanked me many times over.  Nothing like a little Chocolate Chip Streusel-Filled Coffee Cake with your morning coffee, whether at home or work.

Here’s the recipe:

Streusel-Filled Coffee Cake

2-1/4 C. flour
4-1/2 tsp. baking powder
1/2 tsp. salt
1-1/8 C. granulated sugar
1/4 C. oil
2 eggs
3/4 C. milk
1-1/2 tsp. vanilla

TOPPING
3/4 C. brown sugar
3 TBS flour
1 TBS cinnamon
3 TBS butter
3/4 C chopped walnuts (optional)
1 C. Chocolate Chips (NOT optional)

DIRECTIONS
Blend flour, baking powder, salt and granulated sugar. Blend together oil, eggs, milk and vanilla, then mix into the flour mixture. Spread half the batter into a sprayed 8-1/2″ X 13″ baking dish. Sprinkle half the topping mix and Chocolate Chips. Repeat with remaining ingredients.

Bake @ 350* for 35-40 minutes or until a toothpick comes out clean.

    The chocolate chip streusel-filled coffee cake is AWESOME. Also so easy to make, it would be no problem making that before everyone rushes off for the day. I give it 3 stars, and a BIG yummy noise!! 😉

    Are these quantities correct? I made it as described, but the “batter” was really more like a dough – much drier than in your pictures. I had to put it in a 9×9 pan because I couldn’t get it to stretch to fill a 9×13″
