Tips for Melting Chocolate

As you know, there are many uses for melted Chocolate, the most common of which is for dipping things into it – strawberries, cookies, pretzels, you name it!

YUM!

Well, a few of my readers recently asked me for some tips for melting Chocolate, so I thought I’d put together this quick “how to” for everyone.

Tip: It’s important to know that the smallest drop of moisture from a wet spoon or steam from a double boiler can cause melted Chocolate to become lumpy. If this happens, all is not lost. For every 3 oz. of Chocolate, stir in 1 tablespoon vegetable shortening (not butter or margarine because they contain water). Stir continuously until smooth.

Methods for Melting Chocolate

The following are the most common methods for melting Chocolate:

Stove-Top Method: All varieties of Nestle Toll morsels, Treasures and baking bars can be melted using thus traditional method.

Place the Chocolate in a clean, dry heavy-gauge saucepan. Stir constantly over low heat until melted and smooth.  Or, place the Chocolate in the top of a double boiler over hot (not boiling) water, stirring until smooth.

Microwave Method: Nestle Toll House morsels, Treasures and baking bars can also be melted using a microwave oven. Important:  When Chocolate is melted in a microwave oven, it retains its original shape until stirred.

How to Melt Chocolate in a Microwave

The following are directions for melting Milk or Dark Chocolate versus White Chocolate:

Chocolate: Place 8 to 12 oz. Chocolate in a dry microwave-safe container.  Microwave on HIGH for 1 minute; stir well. Microwave on HIGH for an additional 30 to 60 seconds, stirring twice, until smooth.

Premier White: When melting Nestle Toll House Treasures Premier White deluxe baking pieces or Nestle Premier White baking bars, place 6 to 12 oz. in a dry microwave-safe container. Microwave on DEFROST 5 minutes; stir well.  Microwave on DEFROST an additional 1 to 2 minutes, stirring every minute until smooth.
